In choosing recipes, we prioritize flavors available in our foodshed, sourcing everything locally that can be grown here, with a focus on small producers using organic practices. To us, the best ingredients have not only the best flavor, but are also created with an attention to detail and stewardship for the communities in which we live.

seasonal

All of our fruit and herbs are acquired at the peak of their season and preserved for use til available again. We buy hundreds of pounds of fresh fruit from our neighbors, then dehydrate, freeze, and can what we need to carry us through to the next year. When we create our weekly menus, we highlight those things still available at market.
